A Triad Bridal Association member since 2002, Cakes By Manfred has made hundreds of Triad brides (and tens of thousands of their guests!) very happy with his delicious wedding cakes. Pastry Chef Manfred Schmidt has over 30 years experience designing and creating elegant cakes for any occasion. Attention to detail and personal service set him apart.
BACKGROUND: Manfred has won numerous awards, and was inducted into the American Academy of Chefs in 1996. He was Executive Pastry Chef at Greensboro's Ganache Bakery, The Elbow Beach Surf Club in Bermuda and the Peachtree Plaza Resort in Atlanta. He was a Gold Medal Winner in several International Pastry Competitions dating back to 1967.

MELISSA: "I was living in Augusta, Ga. and Brad lived in Greensboro, but we both happened to be visiting Charleston, SC in October 2004. Some mutual friends thought it would be nice if we met, so they set up a "blind-date." Things went very well and we carried on a long distant relationship until we both realized we wanted more." "On our one-year anniversary Brad prepared a delicious candlelight dinner (that was a first!) and served it with a bottle of wine that we had brought back from our vacation in Italy a few months prior. Before dessert he got down on one knee and asked me to spend the rest of my life with him as his wife. I gladly accepted!"
BRAD: "My friends and family fell in love with Melissa right away; they said they hadn't seen me smile that way in years!"
MELISSA: "Everyone felt so comfortable with Brad. They could tell he was kind and genuine."
When it came to planning their wedding, Melissa was concerned because she was new to the area. "I didn't know who to call, where to shop, or who to trust. I attended the Triad Bridal Association bridal show at the Embassy Suites Hotel in Greensboro and in one day I found our photographer, cake, DJ, bagpiper and tuxedos!"
• To preserve the memories of the day Melissa chose David Rosen of Photo Innovations. "David was especially easy and fun to work with. I am a "picture freak" so I knew I had to have the best! I needed a photographer that I liked, trusted, and could feel comfortable with. David was very attentive and professional."
• Brad's favorite part of the wedding planning was tasting cakes from Cakes by Manfred. "Our wedding cake was "created" by Cakes by Manfred. It was without a doubt the best cake we have ever had!"
• Music was an important part of Melissa and Brad's celebration and they were thrilled with their choices: A & A Disc Jockeys kept the party moving with DJ Tony, and Massengale Entertainment provided a Bagpiper, Ruffin Hobbs.
• Melissa and Brad wanted their many out of town guests to stay at a wonderful hotel. Leslie Dupuis of the O.Henry Hotel was extremely attentive to our every need. She was quick to follow-up, kind, and gracious."
Melissa's advice for future brides? "Keep it simple, think with your heart, and enjoy yourself." Brad also had some words for grooms: "Say 'yes' to everything the bride asks, don't EVER roll your eyes, and if you are unsure of whether to say it or not...don't!"
For Melissa, the best part about planning her wedding was "spending time with my Mom, working out every detail. I am thankful that I attended the Bridal Show because all the vendors I used were fabulous. They helped me fulfill my dream of the perfect wedding!"
